Sticky Chicken Wings

-450g chicken wings
2 tbsp coriander seeds
2 tbsp cumin seeds
2 tbsp black mustard seeds
75g smooth apricot jam
zest and juice of 2 lemons
50ml rapeseed or extra-virgin olive oil
salt and black pepper


Boil a large saucepan of water, add chicken wings and simmer for 4 mins. Remove and allow to cool.

Fry spices over a medium heat until they start to pop. Remove from pan and crush in a blender or pestle and mortar.
preheat oven to 240 degrees c / 475 degrees f. Put the spices,jam,lemon zest and juice,oil,salt and pepper in a bowl and mix. Add the chicken wings and stir to coat.
Place on baking tray and roast for 15-20 mins.
Serve hot or cold.
