Beetroot.

(delicious grated raw in a salad, tasty oven roasted and sprinkled with black pepper, yummy when it's pickled and superb when made into soup.)

it's scrummy and really simple.
i just wash the beetroot, trim off the leaves and cut in half. place cut side up on an oven dish and sprinkle with olive oil, a largish splash of rasberry vinegar and a good grind of black pepper.
i've tried other vinegars but i find the raspberry gives the beetroot a lovely fruity tang that compliments it's earthy sweetness.
shove the dish in a medium heat oven for around 45 minutes or until the beetroot is soft and almost caramelised on the top.
